Caramel Cashew Cookies
- 3/4 c. butter flavor shortening
- 1 3/4 c. flour (all-purpose)
- 1 egg
- 1 Tbsp. vanilla
- 1 1/4 c. light brown sugar, firmly packed
- 2 Tbsp. milk
- 3/4 tsp. baking soda
- 1 tsp. salt
- 1 1/2 c. cashews
- 1/2 c. caramel, melted
- Heat oven to 375u0b0.
- Combine shortening, sugar, milk and vanilla in large bowl.
- Beat until creamy at medium speed on mixer.
- Add flour, salt and baking soda.
- Combine, then add into creamed mixture until blended.
- Stir in nuts.
- Drop rounded tablespoonfuls (2 tablespoons dough) on ungreased cookie sheet, about 3-inches apart.
- Bake for 11 to 13 minutes.
- Cookies will be moist, but crisp.
- Cool about 2 minutes before removing from sheet.
- Do not overbake.
- Makes about 3 dozen cookies.
