Herbed Tomato-Cheese Bread
- 2 c. biscuit mix
- 2/3 c. milk
- 3 medium tomatoes, peeled and sliced
- 1 medium onion, chopped
- 2 Tbsp. butter or margarine, melted
- 3/4 c. commercial sour cream
- 1/3 c. mayonnaise
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. dried whole oregano
- pinch of ground sage
- 1 c. (4 oz.) shredded Cheddar cheese
- paprika
- Combine biscuit mix and milk, stirring until dry ingredients are moistened.
- Turn out onto a floured surface; knead 3 or 4 times.
- Press into bottom and up sides of a lightly greased 13 x 9 x 2-inch baking dish.
- Top with tomato slices.
- Saute onion in butter until tender.
- Stir in remaining ingredients, except paprika.
- Spoon mixture over tomatoes; sprinkle with paprika. Bake at 400u0b0 for 20 to 25 minutes.
- Let stand 10 minutes.
- Yields about 12 servings.
