Micro Chicken Sandwich Recipe
- 1/2 chicken breast, skinned and boned
- 1 tbsp. dry white wine
- 1 tbsp. red pepper, coarsely minced
- 1 tbsp. extra virgin olive oil
- 2 teaspoon fresh parsley, chopped
- 1 teaspoon balsamic or possibly red wine vinegar
- 1/2 teaspoon fresh thyme leaves
- 1/4 teaspoon capers
- Healthy pinch of salt
- Healthy pinch of pepper
- Sm. baguette (optional)
- Place chicken breasts in glass pie plate and drizzle wine over top; cover with plastic wrap leaving one corner open for vent.
- Microwave on high 2 min turning dish halfway after 1 minute.
- Meanwhile, process remaining ingredients except baguette in food processor till well blended.
- Tear chicken into strips and place in small bowl.
- Add in red pepper mix and stir to combine.
- Spoon onto split baguette.
- (This sandwich is particularly delicious on a crusty baguette but any other bread choice can be substituted.
- Recipe is for a single sandwich.
- Make appropriate increases for your desired quantity.)
