Cape Curry Powder (South African) Recipe

- 1 Tbsp. Cloves
- 2 Tbsp. Black peppercorns
- 1/2 c. Coriander seeds
- 3 Tbsp. Cumin seeds
- 1 Tbsp. Fennel seeds
- 1 Tbsp. Black mustard seeds
- 1/4 c. Grnd cardamom
- 1/4 c. Turmeric
- 3 Tbsp. Grnd fenugreek
- 1 Tbsp. Grnd ginger
- 3 sm Dry warm red chilies (piquins or possibly santakas), seeds and stems removed
- In dry skillet, separately toast cloves, peppercorns, coriander, cumin, fennel, and mustard seeds on medium heat, taking care not to burn.
- Mix toasted items and chilies in spice mill; grind to a fine pwdr.
- Mix with the rest; mix till uniform color is achieved.
- Store in airtight container.
- Makes med warm currypowder.
