Mexican Lasagne
- Non-stick cooking spray
- 1 onion, sliced Safeway 1 lb For $1.49 thru 02/09
- 500g beef mince Safeway 1 lb For $5.99 thru 02/09
- 700ml jar tomato pasta sauce
- 425g can red kidney beans, drained and washed
- 1/2 cup KRAFT Easy Cheese Cream Cheese Spread
- 1 cup grated KRAFT Tasty Cheese
- 3/4 cup milk
- 375g fresh lasagne sheets
- 85g packet corn chips, lightly crushed
- 300g jar tomato salsa Safeway 1 lb For $1.29 thru 02/09
- Lightly spray a pan with oil and saute onion until translucent.
- Add mince and cook until browned.
- Add pasta sauce and beans, bring to boil and reduce heat and simmer for 5 minutes.
- Gently heat cheese spread, cheese and milk until combined.
- Spoon one-third of the meat onto the base of a 2.5 litre ovenproof baking dish.
- Top with a layer of lasagne sheets then with one-third of the cheese spread sauce.
- Repeat layering twice more.
- Cover and bake at 180C for 20 minutes.
- Top with corn chips and salsa, return to bake, uncovered, for a further 10 minutes.
