Warm Arugula and Portabello Salad
- 2 tablespoons olive oil
- 3 large shallots, sliced
- 2 large portabella mushrooms, sliced
- 6 cups baby arugula
- 12 cup pine nuts, toasted
- balsamic vinegar
- sea salt
- fresh cracked black pepper
- Heat olive oil in medium saute pan over medium heat.
- Add shallots and mushrooms, and saute until soft and fragrant.
- Put arugula, feta cheese, and pine nuts in serving bowl and mix.
- top with hot shallot mixture and toss gently.
- Add balsamic, salt and pepper to taste.
- Serve immediately.
