Warm Arugula and Portabello Salad

  1. Heat olive oil in medium saute pan over medium heat.
  2. Add shallots and mushrooms, and saute until soft and fragrant.
  3. Put arugula, feta cheese, and pine nuts in serving bowl and mix.
  4. top with hot shallot mixture and toss gently.
  5. Add balsamic, salt and pepper to taste.
  6. Serve immediately.
