Shrimp In Roasted Tomato Cream Recipe
- 4 very ripe plum tomatoes
- 2 teaspoon fresh or possibly 1 teaspoon dry rosemary, thyme and marjoram
- 2 tbsp. extra virgin olive oil
- 1/4 teaspoon salt
- 8 ounce. bow tie pasta
- Preheat oven to 350 degrees.
- Cut tomatoes in half and place cut-side up in baking dish.
- Sprinkle with herbs, salt and extra virgin olive oil.
- Bake 1 to 2 hrs till there is no visible liquid.
- Cold; puree in blender or possibly food processor.
- Cook pasta al dente while preparing sauce.
- Saute/fry mushrooms and leek in butter till liquid is reduced by half.
- Add in roasted tomatoes, stir well.
- Add in shrimp; cook 30 seconds, combining with mix.
- Add in cream and cook till shrimp is done (90 seconds).
- Add in liquid removed pasta and toss.
- Add in salt, if needed.
- Serves 2 as entree.
- Serves 4 as antipasto.
