Shrimp In Roasted Tomato Cream Recipe

  1. Preheat oven to 350 degrees.
  2. Cut tomatoes in half and place cut-side up in baking dish.
  3. Sprinkle with herbs, salt and extra virgin olive oil.
  4. Bake 1 to 2 hrs till there is no visible liquid.
  5. Cold; puree in blender or possibly food processor.
  6. Cook pasta al dente while preparing sauce.
  7. Saute/fry mushrooms and leek in butter till liquid is reduced by half.
  8. Add in roasted tomatoes, stir well.
  9. Add in shrimp; cook 30 seconds, combining with mix.
  10. Add in cream and cook till shrimp is done (90 seconds).
  11. Add in liquid removed pasta and toss.
  12. Add in salt, if needed.
  13. Serves 2 as entree.
  14. Serves 4 as antipasto.
