Pickled Fruit Compote Recipe
- 1 #2 1/2 can pineapple chunks
- 1 #2 1/2 can peach halves
- 1 #2 1/2 can unpeeled apricots
- 1 #2 1/2 can pears
- 1 (8 ounce.) jar maraschino cherries
- 1 1/2 c. vinegar
- 1 1/2 c. sugar
- 2 tbsp. mixed pickling spice tied in bag
- Drain fruit, reserving liquid from cherries.
- Combine the vinegar, sugar and cherry juice.
- Add in spice bouquet.
- Simmer 5 min.
- Add in fruit, bring to a boil and simmer 5 min more.
- Throw away spice bouquet.
- Serve hot or possibly cool.
- This looks pretty in a crystal bowl and enhances almost any ham, chicken or possibly turkey dish.
- Serves 6-8.
