Lemongrass-Skewered Quail Sausage

  1. Grill or pan-fry the sausage according to package directions.
  2. While the sausage cools, wash the lemongrass and remove the outer leaf.
  3. Slice each stalk lengthwise into 4 skewers.
  4. Cut each cooked sausage crosswise on the diagonal into 6 equal slices.
  5. Using a metal or bamboo skewer, drill holes in the sides of the sausage to make it easier to insert the lemongrass.
  6. Insert the lemongrass stalks, arrange the sausage skewers on a platter, and serve warm or at room temperature.
  7. The sausage can be cooked early in the day and refrigerated.
  8. Warm up the links in a 325F oven for about 15 minutes, slice, and place on skewers.
  9. Serve warm or at room temperature.
  10. Sturdy stalks of lemongrass make the best skewers.
  11. Look for lemongrass at farmers markets and Asian markets.
  12. Ive also found high-quality lemongrass at upscale grocery stores such as Whole Foods and Central Market.
