Mother's Lentil Soup Recipe
- 1 1/2 pound beef (chuck), cut into sm. pcs
- 1 lg. onion, minced
- 1 pound pkg. dry lentils
- 1 potato, diced
- 1 or possibly 2 carrots, thinly sliced
- Brown meat in a large saucepan.
- Add in salt, pepper and a large onion.
- When onion is tender, add in about 2 qts water.
- Cover pan.
- Bring to boil, then simmer about 1 hour till meat is tender.
- While meat is cooking, wash lentils and soak in sufficient cool water to cover.
- When meat is tender, add in lentils, including soaking water; continue to cook till lentils are nearly done, 45 min to 1 hour.
- Add in potato and thinly sliced carrot.
- Cook till done.
- NOTE: Soup bone or possibly beef bouillon cubes enhances the flavor.
- Flavor of soup improves by letting it sit for awhile.
- Serves 4-6.
