Cheeseless, Gooey Baked Mac Recipe NicoleFriedman
- 10 oz elbow pasta
- 1 1/2 cups 2% milk
- 2 TB cornstarch
- 1/2 tsp fresh grated nutmeg
- 1/2 tsp ground mustard
- kosher salt & pepper to taste
- 1/4 tsp cayenne (or more to taste)
- 1 TB butter
- Boil the pasta in salted water for 6 min, The pasta will be undercooked but it will soak up the sauce later.
- Melt butter on low heat.
- Add 1 cup of milk and bring up to a simmer (not a boil).
- Dissolve cornstarch in 1/2 cup of milk.
- Slowly whisk into the hot milk.
- Stir constantly until it thickens.
- Take off heat and add spices.
- Mix the pasta with the aauce.
- Place in a buttered baking pan and place under the broiler until the top browns.
- With a spatula turn the pasta over (so you can crisp the other side).
- Place back under the broiler until browned and crisp.
