Four Chip Muffins(Makes 12)
- 2 c. flour
- 1/2 c. firmly packed light brown sugar
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2/3 c. milk
- 1/2 c. melted and cooled lightly salted butter
- 2 lightly beaten eggs
- 1 tsp. vanilla
- 1/2 c. semi-sweet chocolate chips
- 1/2 c. butterscotch chips
- 1/2 c. peanut butter chips
- 1/3 c. chopped walnuts
- 1/3 c. chopped pecans
- 1/2 c. milk chocolate chips
- Preheat oven to 400u0b0.
- Grease 12 muffin cups.
- In a large bowl, stir together flour, brown sugar, baking powder and salt. In another bowl, stir together milk, butter, eggs and vanilla until blended. Make a well in center of dry ingredients; add milk mixture and stir just to combine.
- Stir in chips and nuts.
- Spoon batter into prepared muffin cups.
- Bake 15 to 20 minutes or until a cake tester inserted in center of one muffin comes out clean. Remove muffin tin to wire rack; cool 5 minutes before removing from muffin tin.
- Serve warm or cool completely.
- They freeze well.
