Jamaican Meat Pies

  1. To make the filling, heat the oil in a large skillet.
  2. Add the onion, bell pepper and garlic.
  3. Saute until the onion is translucent, but not browned, about 5 minutes.
  4. Add the ground meat and saute until browned, breaking it into small pieces with your spatula.
  5. Add the tomato sauce, tomato puree and hot pepper sauce; simmer 10 minutes.
  6. Add the curry powder to the potatoes and stir the potatoes into the sauce to thicken it.
  7. Add salt and pepper.
  8. Taste the sauce and correct seasonings.
  9. Cool.
  10. If working ahead, cover and refrigerate filling.
