Broccoli Soup(Hot Or Cold)
- 1 small onion, chopped
- 1 stalk celery, chopped
- 1 carrot, chopped
- 2 Tbsp. butter
- 1 lb. broccoli (3 stalks)
- 3 c. chicken broth
- 1 1/2 c. half and half
- salt and pepper
- 1 1/2 c. defatted chicken stock
- 1 c. currants
- 1 tsp. ground cumin
- 1/2 tsp. turmeric
- 1/8 tsp. ground red pepper
- 1 c. couscous
- 1 c. cooked peas
- 1 c. chopped oranges
- 4 dried figs, quartered
- 2 Tbsp. minced fresh parsley
- 1 Tbsp. minced fresh mint
- 3 Tbsp. lemon juice
- 2 Tbsp. olive oil
- In a 1-quart saucepan, combine 1 1/4 cups of the stock with the currants, cumin, turmeric and red pepper.
- Bring to a boil. Stir in the couscous.
- Remove from the heat.
- Cover the pan and let stand for 10 minutes or until all the liquid has been absorbed.
