One of My Favourite Pasta's
- 1 lb spaghetti (or any shape)
- 6 garlic cloves (minced)
- 12 black olives (minced)
- 2 lemons, juice and zest of
- 2 -4 tablespoons olive oil
- 3 ounces capers
- 1 teaspoon red pepper flakes
- 4 ounces almonds (toasted, garnish) or 4 ounces pine nuts (toasted, garnish)
- 12 ounces seafood (or chicken)
- 6 ounces parmesan cheese (fresh)
- 4 ounces whipping cream (optional)
- 1 pinch salt & pepper (to taste)
- Cook Pasta and save some pasta water in case you need it if mixture is to thick.
- Meanwhile saute chicken or seafood in pan and remove.
- Add garlic, olives, lemons and rind, oil, capers, red pepper flakes to pan and saute to blend.
- Add seafood or chicken back in,.
- add enough cream and/or pasta water and saute until desired consistency.
- Add to hot pasta and stir together adding more pasta water if needed.
- Place into a large bowl or individual bowls and garnish with fresh parsley and tarragon and/or basil, nuts and lots of Parmesan cheese.
