Alsace Chicken

  1. Melt the butter with 2 large garlic cloves in a sauce pan.
  2. When cool enough to touch, add 7 teaspoons Dijon mustard, whisk together to thicken slightly.
  3. Set aside.
  4. In a separate bowl, mix together 10 tablespoons dried parsley, 10 tablespoons dried Parmesan cheese, and 3 cups coarse fresh bread crumbs.
  5. You are going to need 2 pounds or 8 chicken breast halves.
  6. Next is the fun part:
  7. Dip the chicken in the butter mixture then in breadcrumb mixture place on broiler pan or shallow pan bake in 350 oven for approx 30 min.
  8. Serve with a dollop of sauce (recipe follows) and curry raisin rice.

  10. The Sauce
  11. 1/4 Cup Mayonnaise 2 Tablespoons Dijon Mustard
  12. Whisk together mayonnaise and Dijon Mustard well and serve with chicken.
