Caprial Acorn Squash Soup
- 3 tabs olive oil
- 1 onion, diced
- 3 garlic cloves, diced
- 2 cups apple juice
- 14 cup white vinegar
- 9 cups broth
- 2 bay leaves
- 2 teaspoons thyme
- 1 teaspoon sage
- 1 teaspoon marjoram
- 2 teaspoons chili sauce
- 1 medium acorn squash
- 1 tab brown sugar
- Saute' onion and garlic in olive oil.
- Add rest simmer till squash is tender this recipe originally called for sherry I sub;d apple juice and vinegar, I also add 1 cup wild rice sometimes.
- I have also used sweet potato cause it is easier to prep than the squash.
