Courgettes (Zucchini) pie
- 700 grams finely grated courgettes
- 3 eggs
- 150 grams feta cheese
- 200 grams cottage cheese
- 1 cup toasted golden breadcrumb s
- 1/2 bunch finely chopped curly parsley
- 1/2 bunch finely chopped dill
- 3 tbsp dried mint
- 6 finely sliced spring onions
- 1/3 cup extra virgin olive oil
- 1 salt
- 1 pepper
- Preheat the oven at 175oC.
- Grated courgettes should be slightly salted (crumbled feta will be added later on) and left for 15 minutes in a colander to drain any excess water.
- Brush an oval glass dish eith the olive oil and scatter evenly on all surface some breadcrumbs.
- Mix together the finely sliced dill, curled parsley and spring onions with the dried mint, crumbled feta, cottage cheese, eggs, the remaining breadcrumbs and pepper.
- Squeeze grated courgettes to drain any excess water.
- Mix with the rest of ingredients.
- Pour the mixture in the dish and drizzle with the remaining olive oil.
- Bake for 45 minutes or until golden.
- This recipe is gluten free if breadcrumbs are omitted or replaced by gluten free breadcrumbs.
