Grandma Karas' Pork Roast And Spaghetti
- 1 (3 1/2 to 4 lb.) boneless pork loin roast
- 4 cloves garlic, minced
- 2 to 3 Tbsp. olive oil
- 2 lb. spaghetti
- 1 can Italian style stewed tomatoes
- salt and pepper
- Pork Roast Preparation:
- Stuff roast with minced garlic.
- Rub roast with olive oil, salt and pepper.
- Place roast, fat side up, in a rack in a shallow pan.
- Roast, uncovered, in a 325u0b0 oven for 40 minutes per pound, until done.
- Approximately 1/2 into cooking time, place 1/2 cup of water into bottom of roasting pan.
- When done, remove roast to carving board using two metal spatulas.
- Do not use forks since they will cause some of the juices to be lost. Let the roast stand about 15 minutes before carving.
- Reserve juices in bottom of roasting pan.
