Pot Au Cafe Chantilly

  1. Blend eggs, sugar, coffee crystals and vanilla together.
  2. In a saucepan, bring milk almost to a boil.
  3. Add hot milk to the egg mixture, slowly and stirring constantly.
  4. Pour into a casserole dish, and place in a bain marie.
  5. Bake at 350F for 1 1/4 hours, until set.
  6. Let cool.
  7. Beat whipping cream and caster sugar together until stiff.
  8. Pipe a border of cream around the edge.
  9. Serve or chill up to 8 hours.
