Breast Of Chicken Fiesta
- 1 c. Cheddar cheese cracker crumbs
- 4 green onions, chopped
- 2 Tbsp. butter or margarine, melted
- 1 c. (4 oz.) shredded Cheddar cheese
- 1/2 tsp. chicken-flavored bouillon granules
- 2 Tbsp. taco seasoning mix
- 8 chicken breast halves, skinned and boned
- 2 c. half and half cream
- 1 c. (4 oz.) shredded Monterey Jack cheese
- 1 (4 oz.) can chopped green chilies, drained
- vegetable cooking spray
- Combine cracker crumbs and seasoning mix, stirring well. Dredge chicken in crumb mixture.
- Place in a 13 x 9 x 2-inch baking pan sprayed with vegetable cooking spray.
- Saute green onions in butter in a skillet until tender.
- Stir in cream and remaining ingredients.
- Pour over chicken.
- Bake, uncovered, at 350u0b0 for 45 minutes.
- Yields 8 servings.
