Garlic Toast With Olive Paste & Tomatoes
- 8 slices country bread, toasted
- 2 large garlic cloves
- 2 teaspoons capers
- 40 pitted black olives
- 4 vine ripened tomatoes
- 8 -10 basil leaves
- salt & pepper (to season)
- Cut the garlic cloves in half and rub over toast before arranging on a large platter.
- Then place the remaining garlic, olives, capers, most of the oil, basil plus a pinch of salt and pepper into a food processor -blend until just combined.
- Spread olive paste over the toast slices.
- Then roughly cut your tomatoes into chunks and place them onto of the toast slices.
- Drizzle a little oil onto each slice and garnish with the remaining basil.
