Garlic Toast With Olive Paste & Tomatoes

  1. Cut the garlic cloves in half and rub over toast before arranging on a large platter.
  2. Then place the remaining garlic, olives, capers, most of the oil, basil plus a pinch of salt and pepper into a food processor -blend until just combined.
  3. Spread olive paste over the toast slices.
  4. Then roughly cut your tomatoes into chunks and place them onto of the toast slices.
  5. Drizzle a little oil onto each slice and garnish with the remaining basil.
