Texas smoked bbq brisket

  1. combine bbq seasoning and chili powder.
  2. rub mixture throughly into beef.
  3. place meat, fat side up into disposable foil pan.
  4. cover and refrigerate 1 to 3 hours.
  5. just before using, prepare mop sauce by combining hot sauce and one cup of beer.
  6. prepare grill for indirect cooking over medium heat 250F.
  7. if desired, toss soaked wood chips over heat source.
  8. place pan with meat in center of grill over indirect heat.
  9. cover grill.
  10. cook meat over low heat 6 to 7 hours until meat is very tender.
  11. base with mop sauce every hour.
  12. combine bbq sauce, butter, and remaining half cup of beer.
  13. simmer 5 minutes until slightly thickened.
  14. slice meat and serve with sauce.
