Fettuccine With Vodka And Tomato Sauce(Prep: 10 Minutes; Cook: 25 Minutes; Serves: 4)

  1. Heat oil in a medium skillet; add onion.
  2. Saute until tender, but not browned, about 5 minutes.
  3. Stir in garlic; saute 1 minute. Add the tomatoes, vodka and red pepper.
  4. Simmer, stirring to break up tomatoes with the side of a spoon, until sauce is reduced and thickened, about 15 minutes.
  5. Stir in cream; simmer, stirring, until sauce is thickened slightly, about 5 minutes.
  6. Season with salt.
