Squash Casserole(Freezes Well!)
- 2 to 3 c. cooked squash
- 1 chopped onion
- 1 egg, slightly beaten
- 1/2 stick margarine, sliced
- 1/2 c. mayonnaise
- 1 Tbsp. sugar
- 1 c. grated Cheddar cheese (sharp), divided
- 1 to 1 1/2 c. cracker crumbs, divided
- dash of cayenne pepper
- salt and pepper to taste
- dash or 2 oregano
- Cook squash with a chopped onion.
- Put well drained hot squash in large mixing bowl.
- Add egg, margarine, mayonnaise, sugar, half
- of the cheese, and half of the crackers.
- Season with cayenne pepper, salt, pepper and oregano; mix well.
- Put into

- 1/2
- quart
- casserole
- dish and top with remaining cheese
- and crackers.
- Bake at 350u0b0 for 20 minutes. Crookneck squash or a mixture of crookneck and zucchini may be used.
- Dot with butter or margarine.
- Makes 6 to 8 servings.
