Squash Casserole(Freezes Well!)

  1. Cook squash with a chopped onion.
  2. Put well drained hot squash in large mixing bowl.
  3. Add egg, margarine, mayonnaise, sugar, half
  4. of the cheese, and half of the crackers.
  5. Season with cayenne pepper, salt, pepper and oregano; mix well.
  6. Put into
  7. a buttered
  8. 1
  9. 1/2
  10. quart
  11. casserole
  12. dish and top with remaining cheese
  13. and crackers.
  14. Bake at 350u0b0 for 20 minutes. Crookneck squash or a mixture of crookneck and zucchini may be used.
  15. Dot with butter or margarine.
  16. Makes 6 to 8 servings.
