Boysenberry Pavola Sundae Recipe
- 284 ml Pot double cream
- 1 Tbsp. Icing sugar
- 125 ml Summerfruit sauce, (4 fl ounce)
- 150 gm Punnet Boysenberries, reserve a few for garnish
- 4 x Meringue nests, roughly minced, reserve 2 Tbsp. for garnish Reserved Boysenberries
- 2 Tbsp. Minced meringue Mint sprigs
- Place the cream and icing sugar in a bowl and lightly whip.
- Divide the summerfruit sauce equally between 4 individual sundae dishes, then add in some rasberries, reserving 8 for decoration.
- Layer with the minced meringue, remaining Boysenberries and cream.
- Decorate with the reserved Boysenberries, minced meringue and mint sprigs.
- Serve immediately.
