Arroz con Guandulas
- 2 cup rice
- 4 cup hot water
- 1/2 cup sofrito
- 16 oz can guandulas
- 2 tbsp alcaparrado ( cappers&olives mix)
- 1 packet sazon with achiote
- 1 can tomatoe sause
- 4 tbsp oil
- 1 garlic powder
- In medium size caldero add oil, tomato sauce, alcaparrado,sofrito, and sazon.. Cook over medium heat 4 minutes.
- add all other ingredients and enough water to cover the rice 1 inch above the rice line.
- Add salt, sazon, and stir to taste.
- Bring to boil,then simmer to almost absorbed.
- Stir gently from bottom to top once or twice.
- Then continue simmer 10-15 minutes
