Chocolate Peanut Brittle

  1. Grease a 15-in.
  2. x 10-in.
  3. x 1-in.
  4. baking pan and a metal spatula; set aside.
  5. In a 2-at.
  6. microwave safe bowl, combine sugar and corn syrup.
  7. Microwave, uncovered, on high for 4 minutes; stir.
  8. Cook 3 minutes longer.
  9. Stir in peanuts and butter.
  10. Microwave for 30-60 seconds or until mixture turns a light amber color (mixture will be very hot).
  11. Quickly stir in cocoa, baking soda, and vanilla until combined.
  12. Immediately pour onto prepared pan; spread with the metal spatula.
  13. Cool before breaking into pieces.
  14. Store in an airtight container.
  15. Note: This recipe was tested in a 1,100-watt.
  16. microwave.
