Viola Scott'S Lima Beans And Bacon Bake
- 2 pkg. (10 oz. each) frozen fordhood lima beans
- 12 slices bacon, browned
- 1 c. chopped onion
- 1/2 c. chopped celery
- 1 1/2 c. shredded Monterey Jack or mild Cheddar cheese
- 1/4 tsp. pepper
- dash of Worcestershire sauce
- Cook lima beans in 1 1/2 cups boiling salted water 15 minutes; drain, reserving 1/2 cup of liquid.
- In a skillet, fry bacon until half cooked.
- With a slotted spoon remove bacon to paper towels to drain.
- Cook onion and celery in bacon fat until softened.
- Toss together lima beans, onion, celery, cheese, pepper, sauce and reserved liquid.
- Turn into a lightly greased casserole dish. Sprinkle top with the crumbled bacon.
- Bake, uncovered, in a 350u0b0 oven about 30 minutes or until the top is browned.
