Canadian Version of English Scones
- 2 cups flour
- 2 12 teaspoons baking powder
- 14 teaspoon baking soda
- 2 tablespoons sugar
- 14 cup butter or 14 cup margarine, softened
- 1 egg, beaten
- 23 cup buttermilk (add 1 Tbsp vinegar to regular milk)
- dried or fresh berries or raisins, added for variety
- Combine flour, baking powder and baking soda and sugar in a large bowl.
- Cut in butter until mixture resembles fine crumbs.
- Stir in the egg and buttermilk.
- Add fruit, etc if desired.
- Turn dough onto lightly floured surface and knead very lightly about 10 times.
- (Over kneading will toughen the dough).
- Pat or roll into a 3/4 inch thick round.
- Cut scones with cutters or a knife.
- Place approximately 1 inch apart on nonstick baking sheet.
- Optional: Brush tops with egg or milk, or sprinkle with sugar.
- Bake 12-14 min at 400F or until lightly browned.
