White Chocolate and Berry Muffins
- 2 tsp lemon juice
- 1 cup milk
- 1/2 cup oil
- 1 large egg
- 1 tsp vanilla extract
- 2 cup self raising flour
- 2/3 cup castor sugar
- 1 cup white chocolate, chopped
- 200 grams berries, fresh or frozen
- Preheat oven to 190C.
- Sift the flour into mixing bowl.
- Add the castor sugar, white chocolate and berries.
- Stir to combine.
- Note: You can use whatever combination of berries you want.
- I like to use strawberries and raspberries.
- In a separate bowl, whisk together the lemon juice, milk, oil, egg and vanilla.
- Add wet ingredients to the dry ingredients and stir to combine.
- Do not overmix.
- Spoon mixture into prepared muffin pans.
- It should make 12-14 large muffins.
- Bake for 25 minutes.
- To test, press the middle of the muffins lightly; it should spring back.
- Cool on a wire rack.
