Meat And Cheese Roll

  1. Combine beef, eggs, bread crumbs, onions, 2/3 cup tomato sauce, salt, pepper and parsley.
  2. Mix well and shape into flat rectangle on a piece of wax paper.
  3. Sprinkle 3 1/2 cups of cheese over meat mixture.
  4. Starting with short edge, roll up like a jelly roll and press ends of roll to seal.
  5. Bake in shallow pan at 350u0b0 for 1 hour.
  6. Drain excess fat.
  7. Pour remaining sauce over roll. Garnish with 1/2 cup cheese and green pepper rings.
  8. Bake an additional 5 minutes.
