Meat And Cheese Roll
- 3 lb. lean ground beef
- 2 eggs, beaten
- 1 1/2 c. Italian style bread crumbs
- 1 c. finely chopped onion
- 30 oz. tomato sauce
- 2 tsp. salt
- 1 tsp. pepper
- 1 Tbsp. parsley
- 4 c. Mozzarella cheese
- 1 green pepper, boiled and cut into rings
- Combine beef, eggs, bread crumbs, onions, 2/3 cup tomato sauce, salt, pepper and parsley.
- Mix well and shape into flat rectangle on a piece of wax paper.
- Sprinkle 3 1/2 cups of cheese over meat mixture.
- Starting with short edge, roll up like a jelly roll and press ends of roll to seal.
- Bake in shallow pan at 350u0b0 for 1 hour.
- Drain excess fat.
- Pour remaining sauce over roll. Garnish with 1/2 cup cheese and green pepper rings.
- Bake an additional 5 minutes.
