Bleu Cheese Coleslaw Recipe
- 3 x Tart green apples, cored and minced (about 5 c.)
- 3 c. Thinly sliced cabbage, (3 to 5)
- 1/4 lb Bleu cheese, crumbled
- 1 c. Lowfat sour cream
- 3 Tbsp. Grated cheddar cheese
- 1 1/2 Tbsp. Thinly sliced green onion, (1 1/2 to 2)
- 1 1/2 Tbsp. Fresh lemon juice
- 1 Tbsp. Minced chives
- 1 Tbsp. Red wine vinegar
- 1 tsp Salt
- 1/2 tsp Freshly grnd pepper
- Combine all ingredients in large bowl and toss well.
- Cover and chill till ready to serve.
