Date Pinwheel Coookies - Date Nut Pinwheel Cookies

  1. Chop dates.
  2. Place dates into small saucepan and add 1/4 cup (60 ml) sugar, dash of salt, and water.
  3. Cook, stirring constantly until mixture is soft.
  4. Remove from heat.
  5. Add grated lemon rind, lemon juice, and chopped nuts.
  6. Mix well and chill.
  7. Cream butter and gradually add 1/2 cup (125 ml) white sugar and 1 cup (225 ml) lightly packed brown sugar.
  8. Beat well.
  9. Beat 2 eggs until thick and add to creamed mixture one at a time, beating well after each addition.
  10. Stir in vanilla.
  11. Measure into a sifter the flour, baking powder, baking soda, and 3/4 tsp (4 ml) of salt.
  12. Sift dry ingredients into creamed mixture about 1/4 at a time.
  13. Combine thoroughly after each addition.
  14. Chill until firm.
  15. Divide dough into 3 parts.
  16. Roll out 1 part at a time into a rectangle.
  17. Spread with date filling.
  18. Roll up jelly roll fashion in waxed paper.
  19. Chill several hours.
  20. Preheat oven to 350 degrees (175 C.).
  21. With sharp knife, slice rolls into 1/4 inch thick slices and place on greased cookie sheets.
  22. Bake 10 to 13 minutes.
  23. Let cool.
