Oat Waffles
- 1 cup water
- 34 cup oats
- 3 tablespoons butter
- 1 14 cups flour
- 1 tablespoon sugar
- 1 12 teaspoons baking powder
- 12 teaspoon baking soda
- 12 teaspoon salt
- 2 large eggs
- 1 -1 12 cup buttermilk
- 14 cup butter, melted
- icing sugar
- fresh fruit (optional)
- In a saucepan, bring water to boil.
- Add oats and cook, while stirring, for 3 minutes.
- Remove from the heat.
- Add butter and mix until melted.
- Let cool.
- In a large bowl, sift flour, sugar, baking powder, baking soda and salt.
- In another bowl, mix eggs and buttermilk.
- Add to the oat mixture that is cold.
- Add egg mixture to dry ingredients and stir until its homogeneous, without stirring too much.
- (If the dough is too thick, you can add a little bit more buttermilk)
- Preheat your waffle pan and brush the pan with melted butter.
- While following the instructions of the manufacturer, pour a little bit of dough on the pan and cook for about 4 minutes or until golden.
- Sprinkle with icing sugar.
- Serve with fresh fruits if wanted.
