Brownie Angel Pie
- 3 egg whites, room temperature
- 18 teaspoon salt
- 14 teaspoon cream of tartar
- 34 cup granulated sugar
- 34 cup chocolate wafer crumbs
- 12 cup chopped pecans or 12 cup walnuts
- 12 teaspoon vanilla
- 1 cup whipping cream
- 2 tablespoons cocoa
- 1 tablespoon granulated sugar
- 12 teaspoon vanilla
- 2 tablespoons grated chocolate
- For the meringue crust, beat egg whites, salt and cream of tartar until a it forms a stiff froth.
- Add the sugar gradually, until the mixture is very stiff and the sugar is dissolved.
- Fold in wafer crumbs, pecans and vanilla.
- Spread in a greased 9 inch pie plate pressing the mixture up the sides slightly to form a shell.
- Bake in 325F oven about 35 minutes until dry.
- Cool.
- To make the filling you beat the whipping cream, cocoa, sugar and vanilla in a small bowl until stiff.
- Spread over pie.
- For a garnish sprinkle with grated chocolate.
