Steamed Apple-Date Pudding
- 8 oz. pkg. pitted dates
- 1/2 c. apple cider
- 3/4 c. sugar
- 1/2 c. butter
- 4 eggs
- 2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/4 tsp. ground cloves
- 1 large tart apple
- 3/4 c. chopped nuts
- Peel and chop apple.
- Set aside.
- In blender or food processor, mix dates and apple cider until smooth.
- Set aside. Grease and set aside a 2 1/2-quart baking pan, heatproof bowl or mold.
- Set aside.
- Cream butter and sugar.
- Beat until light.
- Add and beat in the eggs, then dry ingredients.
- Add date mixture. Beat one minute.
- Fold in chopped apple and nuts.
- Spoon into prepared pan, bowl or mold.
- Cover with aluminum foil.
- Steam 2 1/2 to 3 hours, following standard procedure for steamed pudding. Serve warm with sauce.
