Cherry Pecan Loaf
- 2 1/4 cups all purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/4 cup margarine, softened
- 1/4 cup sugar
- 1/2 cup egg substitute
- 6 packets Equal sweetener
- 1/2 cup unsweetened applesauce
- 1 tsp. vanilla extract
- 1/4 tsp. almond extract
- 1 (8 oz.) can Vanilla Glucerna Shake
- 3 ounces dried red tart pitted cherries
- 1/2 cup chopped pecans
- Preheat oven to 350 degrees.
- Spray 9 x 5 inch bread pan with vegetable oil and flour sides.
- In medium bowl, combine flour, baking soda and salt.
- Set aside.
- In large bowl, cream margarine and sugar together
- Add egg substitute and continue to mix for an additional minute.
- Add Equal, applesauce, vanilla and almond extract.
- Alternately add flour mixture and Glucerna Shake until ingredients are just moistened. Stir in cherries and nuts.
- Pour batter into prepared pan.
- Bake for 50 to 60 minutes or until inserted toothpick comes out clean. Cool completely before slicing.
