Macadamia-Crusted Tilapia With Pineapple Salsa

  1. Preheat oven to 400 degrees.
  2. Dredge fish in flour, then egg, then nuts.
  3. Place on oiled baking sheet.
  4. Bake 20 minutes until golden brown.
  5. Make the salsa as far ahead as possible to allow time for flavors to meld.
  6. Combine all salsa ingredients and refrigerate.
  7. Serve over fish.
