Macadamia-Crusted Tilapia With Pineapple Salsa
- 12 cup flour
- 1 egg, lightly beaten
- 1 cup crushed macadamia nuts
- 4 tilapia fillets
- 1 cup fresh pineapple, finely chopped
- 1 tablespoon red onion, minced
- 12 jalapeno, minced
- 14 cup cilantro, minced (1/4 c BEFORE mincing)
- Preheat oven to 400 degrees.
- Dredge fish in flour, then egg, then nuts.
- Place on oiled baking sheet.
- Bake 20 minutes until golden brown.
- Make the salsa as far ahead as possible to allow time for flavors to meld.
- Combine all salsa ingredients and refrigerate.
- Serve over fish.
