Turkey Artichoke & Sun -Dried Tomato Panini
- 1 Tablespoon Sun Dried Tomato Pesto
- 1 Tablespoon Mayonnaise
- 1 whole Foccacia Roll, Sliced Horizontally
- 2 slices Cheese Of Choice
- 3 whole Canned Artichoke Hearts, Chopped
- 2 slices Turkey Breast
- Heat a skillet over medium heat (or use a panini press if you have one).
- Mix together pesto and mayo.
- Spread mixture on both halves of bread.
- Layer a slice of cheese, artichoke hearts, turkey and the final slice of cheese onto one half of the roll.
- Top with the remaining half.
- Place in a skillet and press down with another pan (I used cast iron skillets and weighted the top one with a large can of beans).
- Cook for about 2 1/2 minutes.
- Flip the sandwich and weight again, grill for an additional 2 minutes.
- Enjoy!
- I used American cheese because its what I had on hand.
