Twice-Baked Potatoes for One

  1. Heat oven to 400 degrees F.
  2. Pierce potato in several places with fork.
  3. Bake 45 min.
  4. or until tender.
  5. Cool slightly.
  6. Cut potato lengthwise in half; scoop out centers into medium bowl, leaving 1/8-inch-thick shells.
  7. Mash potatoes lightly.
  8. Add next 6 ingredients; mix well.
  9. Spoon into potato shells.
  10. Bake 20 min.
  11. Meanwhile, toss watercress with tomatoes and dressing.
  12. Serve potatoes with watercress salad.
