Southwest-Style Chicken Burgers
- 1 egg, slightly beaten
- 14 cup finely crushed tortilla chips
- 3 tablespoons finely chopped green sweet peppers
- 34 teaspoon chili powder
- 14 teaspoon salt
- 14 teaspoon black pepper
- 1 lb ground uncooked chicken
- 4 slices monterey jack pepper cheese
- 4 kaiser rolls or 4 hamburger buns
- 1 avocado, halved, seeded, peeled and sliced (optional)
- 4 lettuce leaves
- 14 cup salsa
- Preheat broiler.
- Mix together egg, tortilla chips, sweet pepper, chili powder, salt and pepper.
- Add chicken, mix well.
- (mixture will be wet).
- Shape chicken into four 3/4 inch patties.
- Place patties onto unheated rack of broiler pan.
- Broil 4-5 inches from heat for 14 - 18 minutes or until no longer pink.
- (165 degrees) turning once halfway through.
- Top burgers with cheese and broil an additional minute until cheese melts.
- Serve on toasted rolls.
- Top with avocado, lettuce, and salsa.
