Curry Chicken Casserole
- 4 cups chicken chopped
- 20 ounces broccoli, frozen cooked and drained
- 1/2 teaspoon salt and black pepper
- 2 cans soup, cream of chicken
- 1 cup mayonnaise
- 1/2 cup cheddar cheese grated
- 1/2 cup bread crumbs soft
- 1 teaspoon curry powder
- 1 teaspoon lemon juice
- 1 tablespoon butter melted
- Preheat oven to 325 degree F.
- Use cooked chicken (or better yet cook some up fresh).
- Place cooked broccoli and then chopped chicken in a large casserole.
- Mix together soup, mayonnaise, curry powder, lemon juice, salt & pepper.
- Pour over the chicken and top with cheese.
- Toss bread crumbs in melted butter and sprinkle over the top.
- Bake uncovered for 35 minutes or until it's bubbling, cheese melts, and top becomes golden and brown.
- Cool for a few minutes and serve warm.
