Stuffed Brunch Biscuits
- 1 packages Bratwurst or other non spicy sausage
- 1 packages biscuits
- 2 cup apple cider
- 5 clove garlic; cut in half lengthwise
- 1 bay leaf
- 1 drizzle olive oil
- 1 tsp chopped thyme
- 1 roasted bell pepper; large julienne
- 2 tbsp honey mustard; each
- 3 tbsp butter
- 3 tbsp butter; melted
- 1 salt and pepper
- 1 yellow onion; large julienne
- Heat butter in pan with a splash of olive oil.
- Add onions.
- Add thyme and a pinch of salt and pepper.
- Add a splash of cider if onions are about to burn.
- Cook on low heat to caramelize onions for 20-30 minutes.
- Put sausages in a cold pot.
- Cover with apple cider.
- Add garlic and bay leaf.
- Poaching liquid at 160.
- Do not let cider go past a light simmer.
- Cook to 155.
- Approximately 20-30 minutes.
- Press 2 biscuits together and flatten the dough in a square
- Lay down the onions, sausage, bell pepper, poached garlic, and honey mustard in the center.
- Roll and fold dough.
- Press to seal.
- Brush outside with melted butter.
- Add cracked black pepper.
