Hearty Beef And Tomato Stew
- 1 lb. beef, chuck, blade or brisket Safeway 1 lb For $5.99 thru 02/09
- 1 onion, cut into wedges
- 1 clove garlic, minced
- 1 can (10 oz) condensed beef broth
- 1 can (19 oz) whole tomatoes
- 1 1/2 tsp. dried thyme leaves
- 3 potatoes, peeled and chopped Safeway 2 pkg For $5.00 thru 02/09
- 3 carrots, peeled and chopped
- 2 Tbsp. flour
- 2 Tbsp. water
- Cut beef into 1/2-inch cubes.
- Brown beef, onion and garlic in oil in large frypan over medium-high heat.
- Add broth, tomatoes and thyme.
- Bring to boil.
- Cover and simmer over low heat 30 minutes.
- Add potatoes and carrots.
- Cook, covered, 45 minutes more or until tender.
- Dissolve flour in water.
- Add to frypan and cook until thickened, stirring constantly.
