Southern Shrimp And Chicken
- 5 slices bacon
- 1 1/2 lb. chicken thighs, halved
- 3 Tbsp. flour
- 1 c. chopped onions and celery
- 1/2 c. chopped green pepper
- 2 tsp. chopped garlic
- 1 can chicken broth
- 1/2 tsp. salt
- 1/4 tsp. red, white pepper and thyme
- 1 lb. shrimp, peeled
- 2 Tbsp. parsley
- Cook bacon.
- Discard all but 2 tablespoons drippings.
- Brown chicken in batches over high heat, transfer to bowl.
- Add flour to pan.
- Cook until browned.
- Add onions, celery, green pepper and garlic; cook about 5 minutes.
- Stir in broth, salt, pepper and thyme.
- Bring to a boil, stirring constantly.
- Reduce heat; simmer 5 minutes.
- Return chicken to pan; cook 5 minutes more.
- Stir in shrimp and cook about 2 minutes.
- Sprinkle with bacon.
- Makes 6 servings.
