Chicken With Sauce Piquante
- 3 -4 lbs hen or 2 rabbits or 2 squirrels, cut up
- 12 cup flour
- 12 cup oil
- 4 onions, chopped
- 1 cup green pepper, chopped
- 3 garlic cloves, minced
- 3 stalks celery, chopped
- 8 ounces tomato sauce
- 1 (6 ounce) can sliced mushrooms
- 2 bay leaves
- 1 cup dry vermouth
- salt and pepper
- Make a roux with oil and flour.
- Add onions, garlic, green pepper and celery.
- Cook until tender.
- Add all other ingredients and cook until game is tender.
- Serve over rice.
