Spinach Roll-Ups
- 2 c. shredded Mozzarella
- 3/4 c. Ricotta cheese
- 3/4 c. grated Parmesan cheese
- 1 egg, beaten
- 1/4 c. margarine or butter
- 1/4 c. flour
- 1 c. milk
- 1 c. light cream or half and half
- 8 to 10 lasagna noodles, cooked and cooled
- 3 Tbsp. butter
- 1 red pepper, finely chopped
- 1/2 c. chopped onion
- 2 pkg. frozen spinach, chopped, squeezed and sauteed briefly in butter
- salt and pepper to taste
- Preheat oven to 375u0b0.
- Saute onion and pepper in 3 tablespoons butter until tender.
- Add spinach mixture.
- Combine spinach, onion and pepper with 1 1/2 cups Mozzarella, Ricotta, 1/2 cup Parmesan and egg.
- Set aside.
- Melt 1/4 cup butter; stir in flour, milk, cream and remaining Parmesan cheese.
- Bring to a boil, stirring constantly, until thick.
- Set aside.
- Spread spinach mixture over a cooked, dried noodle and roll up.
- Continue until all mixture is used up.
- Spread a small amount of cheese sauce in an 8 x 10-inch baking dish.
- Place rolls in dish; pour over remaining sauce and bake 40 to 50 minutes or until bubbly.
