Tortilla Soup
- 1 medium onion, chopped
- 1 jalapeno pepper, chopped (optional)
- 2 cloves garlic, minced
- 2 lb. ground chuck
- 1 (14 1/2 oz.) can tomatoes
- 1 (5 oz.) can Ro-Tel tomatoes and green chilies
- 1 (10 1/2 oz.) can chicken broth
- 1 (10 1/2 oz.) can beef broth
- 1 (10 3/4 oz.) can tomato soup
- 1 1/2 c. water
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1 tsp. salt
- 1/2 tsp. lemon-pepper seasoning
- 2 tsp. Worcestershire sauce
- 2 Tbsp. Tabasco sauce (optional)
- 4 tortillas, cut in 1 inch squares
- 1/2 c. grated Cheddar cheese
- Saute first 3 ingredients in small saucepan, in small amount of oil.
- Brown ground beef in large pot and drain off fat.
- Add all ingredients together with beef, except cheese and tortillas. Simmer 50 minutes.
- Add tortillas and cook 10 minutes.
- Pour into mugs and sprinkle with cheese.
