Turkey Taco Salad
- 1 tablespoon extra virgin olive oil
- 1 lb ground turkey (I usually get the leanest)
- 12 teaspoon salt
- 12 teaspoon pepper
- 1 teaspoon cumin
- any brand taco seasoning (I usually use 2 packets for extra flavor my favorite is Old El Paso)
- 1 head iceberg lettuce
- 2 avocados
- 12 onion
- 3 stalks celery
- 1 cucumber
- matchstick carrot
- tomatoes
- Mexican blend cheese
- Doritos, 100 calorie pack smashed in bag
- Tabasco sauce (optional as dressing)
- In a saucepan heat olive oil over medium heat.
- Add Turkey with seasonings (salt, pepper & cumin) & cook until white (no pink is showing).
- Draining the meat is not necessary (but optional) since turkey has little fat & the olive oil will be absorbed.
- Add the taco seasoning with water & cook until sauce is thickened.
- Assemble the salad & put the turkey meat on top of the veggies.
- Then add the cheese.
- Now add half to a full bag of the Doritos.
